To make a traditional English pudding, here's a simple recipe for a classic steamed sponge pudding:

Ingredients:

  • 200g self-raising flour

  • 200g butter (softened)

  • 200g sugar

  • 4 eggs

  • 100ml milk

  • 1 tsp vanilla extract

  • Pinch of salt

For the sauce:

  • 150ml double cream

  • 100g sugar

  • 50g butter

Instructions:

  1. Prepare the pudding mixture:
    In a large bowl, beat the softened butter and sugar together until light and fluffy. This should take about 3–5 minutes. Add the eggs one at a time, beating well after each addition. If the mixture starts to curdle, add a tablespoon of the flour to help it bind together.

  2. Add dry ingredients:
    Sift the self-raising flour and a pinch of salt into the mixture. Fold it gently with a spatula until fully combined. Gradually add the milk and vanilla extract, mixing until the batter is smooth.

  3. Prepare the pudding basin:
    Grease a 1-litre pudding basin with butter. Pour the pudding batter into the basin, smoothing the top with a spatula. Cover the top of the basin with a piece of baking paper and then with a piece of foil. Secure it tightly with string around the rim of the basin.

  4. Steam the pudding:
    Place the pudding basin into a large pot or steamer. Fill the pot with water so it comes halfway up the side of the pudding basin. Cover the pot with a lid and steam the pudding for about 1.5 to 2 hours. Check occasionally to ensure the water doesn't boil away. Add more water as needed.

  5. Make the sauce:
    In a small saucepan, melt the butter, sugar, and double cream together over low heat. Stir continuously until the sugar has dissolved and the sauce has thickened slightly. Remove from heat and keep warm.

  6. Serve:
    Once the pudding is done, carefully remove the basin from the steamer and let it sit for a few minutes. Run a knife around the edges to loosen the pudding, then turn it out onto a plate.

  7. Drizzle the sauce:
    Pour the warm cream sauce over the pudding before serving.

This rich and comforting dessert is a perfect way to enjoy a classic English treat.
