In this sentence, an is actually a mistake if the noun is information.

Information is an uncountable noun in English. That means we do not say an information, just like we do not say a water or a homework. So the correct sentence is:

What exciting information it is!

The pattern is this:

  • What + adjective + uncountable noun!
    What exciting information it is!
  • What + a/an + adjective + singular countable noun!
    What an exciting story it is!

If you want to use an, you need a countable noun, for example piece:

What an exciting piece of information it is!

So an does not belong with information. It can belong with piece, because piece is a singular countable noun.
